Heart-Healthy Side: Garlic, Zucchini and Tomato Sauté (Recipe) by Dr. Lou Ignarro


Garlic is an excellent food for supporting circulation and cardiovascular health. Heat olive oil over low to medium heat, making sure to coat pan. Add sliced zucchini, then layer with chopped garlic, distributing evenly. Sauté for 2-4 minutes.

Add grape or cherry tomatoes. Sauté for an additional 2-4 minutes, or until vegetables are cooked but still firm.

Start to finish: 15 minutes
Servings: 4

  • 1 medium zucchini, sliced
  • 1 box grape or cherry tomatoes (approximately 30 tomatoes)
  • 8 cloves garlic, chopped
  • 1 tablespoon olive oil
  • Sea salt to taste

Sauté for an additional 2-4 minutes, or until vegetables are cooked but still firm. Serve with salmon, on top of quinoa or enjoy as a healthy side.
