Insalata di cetrioli

Una ricetta veloce, fresca e nutriente che ha come base i cetrioli ma alla quale si possono aggiungere verdure tagliate finemente come anelli di cipolla rossa, carote o peperoni rossi o gialli ed erbe aromatiche ad esempio prezzemolo o menta.

Come condimento all’insalata invece emglio usare del succo di lime, ma vanno benissimo anche limone, aceto di mele, aceto di sidro o aceto balsamico o aceto di vino. Inoltre qualcosa di dolce come lo sciroppo d’uva o lo zucchero bianco o di canna, o lo sciroppo d’acero o il semplice dolcificante per chi è attento alla linea. Infine sale (sale rosa o sale di pesce) e peperoncino o pepe bianco, pepe nero, peperoncini freschi o tabasco.

L’insalata di cetrioli può essere servita direttamente come contorno oppure possiamo unirla ad un’insalata verde. Ma va benissimo anche come salsa per il pollo alla griglia o per farcire morbidi tacos.

Dal punto di vistra nutrizionale i cetrioli contengono un piccolo quantitativo di vitamine e sali minerali ma sono ricchissimi di acqua e poveri di calorie meno, di 15 calorie per 1-2 cetrioli. Tutta l’insalata contiene quindi poche calorie e la possiamo mangiare come snack per avere qualcosa di stuzzicante già pronto al primo languorino.

Why do men lose weight faster than women? | Herbalife Healthy Eating Advice

It’s true men lose weight faster than women. But why? Why do men tend to lose more quickly than women? Learn why with Susan Bowerman, MS, RD, CSSD, FAND in this week’s healthy eating video.

Too many women figure that they’re ‘not trying hard enough’ to lose weight. But it usually isn’t that they aren’t doing enough – or that men are trying harder. It really comes down to the fact that men and women are simply made differently – and those differences have a big impact on weight loss rates.

There are three main reasons why men lose weight faster than women. It has to do with body size, body composition, and how they burn calories.
The larger a person is, the more cells they have and the more calories it takes to maintain body size. Men tend to be larger than women, so they need more calories to maintain their weight.

Men tend to have more lean body mass than women do so their body composition is different as well. Lean body mass is simply everything that’s not fat – so this component includes your bones, organs, muscles, ligaments, tendons and fluids. Every pound of lean body mass you have burns about fourteen calories a day or about thirty calories per kilo. Since men tend to have more lean body mass than women do, their daily calorie burn is higher. That alone puts men at an advantage when it comes to weight-loss because they’re able to burn more calories.

Men also burn more calories than women do when exercising. This is because it takes more calories to move a larger body through space. Since men tend to be larger than women, it takes more calories to do the same amount of exercise at the same intensity. Also, because men burn more calories at rest it does make it a little easier for them to lose weight.

For example, a heavy-set guy would need about 2,500 calories for him to maintain his weight. If he wanted to lose weight, he can cut 1,000 calories out of his daily intake, and only consume 1,500 calories per day. This is a reasonable amount of food. With this calorie deficit he can pretty easily lose about two pounds a week. A women on the other hand who maintains her weight on 1,600 calories per day wouldn’t be able to cut so many calories out of her daily intake. It’s not safe to cut down below 1,200 calories per day. So, if she goes from 1,600 to 1,200 calories a day, she’s only cutting out 400 calories a day. At a 400 calorie a day deficit, she’ll be lucky if she loses about half a pound per week.

How long will it take to lose weight? | Susan Bowerman | Discover Good NutritionEvery time I have a new client scheduled to see me for weight loss, I have a pretty good idea of how our first conversation will go.  The first thing they usually want to know is how much I think they should weigh.  The answer is usually less than straightforward (see my post of October 7) and that question is inevitably followed up by a similar, and equally vexing query:  “how long will it take?”.  I’ve had this same conversation countless times over the years, and my answer is always the same – “it depends”.

Not a satisfying response, I realize, but the rate at which a person will lose weight depends on a lot of things.  It’s like a road trip.  You can look at the map, determine how many miles you have to travel, figure your average speed and then estimate how long it will take you to get there.  That works sometimes.  But maybe you come across a traffic jam, or a detour.  Maybe you drive through a town you’ve never been to and decide to stop a while.

It’s much the same with weight loss, even though the math is also fairly simple.  I can estimate how many calories you burn at rest (called your resting metabolic rate), and then tack on some extra calories for your current level of activity.  If you want to lose a pound in a week’s time, you’ve got to come up about 500 calories short of that number every day – either by eating 500 fewer calories, or burning off an extra 500 through exercise or, more likely, some combination of the two .

The problem is that there are just too many things that affect the final outcome.  For one thing, estimates of how many calories you burn every day are just that – estimates. Keeping track of how many calories you eat is just estimate, too – and most studies say that people underestimate the calories they eat by at least 20%.

And what about those calories you think you’re burning?  An exercise chart might tell you that swimming burns 500 calories an hour – but are you swimming nonstop for 60 minutes?  Are you even swimming at all?  I once spotted a client at the local pool… having a lengthy conversation with a girlfriend while sitting on the steps in the shallow end.  She never saw me, and I had to bite my tongue at her next visit when she told me that she’d been “swimming for an hour three times a week” – and couldn’t figure out why she wasn’t losing weight.

So just like that road trip, you can make a rough guess as to how long it will take you to reach your goal.  But you need to accept that it’s only that – a guess.  If you consistently cut 500 calories from what you need – then yes, you should drop about a pound per week.  But just like when you drive your car, you may not go at a consistently steady speed or burn through your fuel at a perfectly consistent rate.  And just like traffic jams and detours, things get in the way to slow us down or get us off track.  But eventually we get back on the road, and keep going.

So if you’re wondering ‘how long will it take?’ I encourage you to focus instead on all positive changes that are made along the way.  Because in the long run, if you improve your diet and get more active, the weight will take care of itself – in its own time.  And just like a road trip, sometimes it’s best to focus more on the trip, and less on the destination.

Making healthy food choices when shopping is key to staying on track with your nutrition. Susan Bowerman, MS, RD, CSSD, FAND gives you pointers on how to shop at your local health food store.

Not all items at your local health food store are healthy. Make sure to keep that in mind while grocery shopping and don’t be misled by food labels that sound healthy. Certain foods have a healthy image or “health halo” because they’re labeled as fat-free, whole grain, gluten-free, low-fat or no sugar added but while the labels may sound good, they may be distracting you from the whole story. Susan headed to a local health food store to pick up a few items and here’s what she found:

• All-natural ginger ale – The package on the ginger ale said “no high fructose corn syrup, sweetened with cane sugar, no artificial flavors or colors.” That may sound pretty healthy but when you look at the nutrition facts panel and take a look at the calories and sugar content, you will find it actually has more sugar and calories than a similar ginger ale from a regular grocery store.
• Natural Gel Snack – The ingredients listed on this item were sugar, citric acid and natural flavors. This was advertised as a “vegan, fat-free, dairy-free, no artificial colors” item. Compared to the nutrition panel on a similar product at the regular grocery store, you would find that this one from the health food store has a little more sugar and calories because the serving size is larger.
• ‘Fudge Mint’ Cookies – These cookies were labeled as having “no hydrogenated oils, no artificial preservatives or flavors, no high fructose corn syrup, all natural ingredients.” On the nutrition panel the ingredients listed included sugar, palm oil, and white flour. Despite the ‘healthy’ food labels on the packaging the fat and calories per serving is nearly identical to a very similar cookie that you might pick up at your regular grocery store.
• Organic white bread – The packaging on the bread stated the bread was made with refined wheat flour. When a food is labeled as having wheat flour it doesn’t necessarily mean it was made with 100% wheat flour. The bread was labeled as “made with organic cane juice, organic oat fiber, organic oil, and sea salt.” The packaging also claimed the bread had 1g of whole grain per serving, that’s about a quarter of a teaspoon. If organic ingredients are important to you then this would be a good choice for white bread. But pay attention to the nutrition facts panel. The calories, fiber, and ingredients in this organic white bread is almost the same as the regular white bread you’d find at a regular grocery store.
• Organic potato chips – These chips were made with organic potatoes, organic vegetable oil, and sea salt. The nutrition facts panel on these organic potato chips compared to the nutrition facts panel on a bag of regular potato chips is exactly the same for ingredients, calories and fat.

If you’re grocery shopping at a health food store and find yourself swayed by the labels on the packaging, make sure to take the time to read the nutritional facts panel.

VIDEO: L’uovo sodo perfetto con Susan Bowerman

La nutrizionista Herbalife ci suggerisce un metodo per bollire e cucinare un uovo sodo perfetto, in modo da ottenere una morbida parte bianca ed un parte rossa compatta ma non secca.

Il segreto è presto svelato: immergete le uova in una casseruola con acqua fredda, fatele bollire per un minuto e poi coprite la pentola con un coperchio. Togliete dal fuoco e lasciate riposare in 15 minuti. Poi passate le uova in una ciotola con del ghiaccio per farle raffreddare.

I questo modo le uova si sbucceranno facilmente e saranno e splendide a vedersi ed ottime da gustare!
