I modified a tasty old family recipe by replacing half the butter with applesauce, Splenda Blend for sugar, and 8 scoops of Formula1 shake mix in place of the flour. The resulting bread tasted amazing, but was a little too moist and the vanilla flavor was a bit strong. On the second attempt, I decreased the amount of applesauce and vanilla extract. The result….. perfection.

When I cooled the loaves and got ready to take a picture, my 3 yr old was already nibbling on the end of one of the loaves.  You cannot taste the zucchini and could probably increase the amount if desired. The smell of pumpkin and spices filling my house is perfect for this time of the year. I hope you guys enjoy this recipe as much as I do!
