HERBALIFE PUMPKIN ZUCCHINI BREAD
8 scoops HERBALIFE French Vanilla Shake Mix
2 cups light baking flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp cinnamon
1/3 cup + 3 TBSP egg whites
1 cup Splenda Blend
1 cup canned pumpkin
1/2 cup unsalted butter (softened)
1/3 cup unsweetened applesauce
1 1/2 tsp vanilla extract
1 cup shredded zucchini
1/2 cup chopped pecans or walnuts
Preheat oven to 350°.
Mix dry ingredients in a medium size bowl. In a large bowl, combine egg whites, Splenda Blend, pumpkin, applesauce, butter, and vanilla; whisk until smooth. Gradually add dry ingredients to pumpkin mixture and mix well. Stir in zucchini and nuts.
Pour into two greased and floured 9-in. x 5-in. loaf pans. Bake at 350° for 45-50 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes.
Yield: 2 loaves (20 slices)
Amount Per Serving: 1 slice
I modified a tasty old family recipe by replacing half the butter with applesauce, Splenda Blend for sugar, and 8 scoops of Formula1 shake mix in place of the flour. The resulting bread tasted amazing, but was a little too moist and the vanilla flavor was a bit strong. On the second attempt, I decreased the amount of applesauce and vanilla extract. The result….. perfection.
When I cooled the loaves and got ready to take a picture, my 3 yr old was already nibbling on the end of one of the loaves. You cannot taste the zucchini and could probably increase the amount if desired. The smell of pumpkin and spices filling my house is perfect for this time of the year.
